Brazil Topazio
Edison Ferreira Cardoso's story in coffee began at an early age. His father, Jose, tried twice to start producing coffee on the family land. After his crop was taken twice by an unusual frost, Jose decided to switch to cattle farming. When Edison developed an interest in coffee in 1986, he convinced his father to give it one more shot. Edison and his wife, Kerli, now manage the family farm in Minas Gerais. Kerli is responsible for the post-harvest work around the farm. The couple has shared their knowledge with their children, Edison Junior and Maria Eduarda, who already follow their parents' work, aiming to keep the passion for coffee culture alive. We are excited to offer this lot as an approachable light roast, suitable for everything from drip to espresso. Dial into dried cherry, drinking chocolate, and pecan with a 1:16 brew ratio, filtered water at 206-208°F, a medium grind, and a 3-3.5 minute brew cycle.
